Uh-oh! We bought too many bananas, and now they look like this! Whatever shall we do?
We make banana bread, that's what! And, because I want to be able to actually eat it, we make gluten and dairy free banana bread. And it will be damn tasty.
Here's the recipe we'll be using:
Gluten-Free Banana Bread
We will, of course, be heavily modifying it. Not out of any dietary need, but because that's just how I cook. While others talk to the television or drive from the back seat, I regularly have conversations with recipe authors from my kitchen. They'll try to talk smack when I don't meaasure while I'm all "beeotch, I don't need a tablespoon, I AM a tablespoon" or they'll gasp when I add just thismuchmore olive oil or halve the sugar or dump in fistfuls of whatever else sounds appealing and I laugh all the way to the dinner table. I don't much like cooking, but my instincts are pretty good. Thanks, Grandma Gertie.
First we marshall some of the ingredients. I'm maybe a banana short of the recipe yield, so I substitute canned pumpkin for the applesauce for some extra added heft. Also, pumpkin. Yummy.
This is a little disgusting, but it's a process.
Oh, look! Someone is up from her nap and wants to know what Mama is doing in the kitchen! Pull up a stepstool, little sprite, and let the mystery be revealed. Also: stir it, please.
Wait-- what's that you say? We've got half a bag of fancy dark chocolate chips and some leftover shredded coconut, and those aren't in the recipe? TOSS THEM IN, little sprite! Toss them in, and learn.
So then I divided the batter into two greased loaf pans, popped them in the oven, and we had some time to kill.
Then the oven timer went off, eh...voila! Banana-scented, gluten free perfection.
Ooooooohhhhh....
Aaaaaaahhhhhh.
But the true test of any recipe is in the eating, so we dole some out to our official testers and wait for the reviews.
Pretty sure that's pleasure, but for real, Mr. Milkweed, it looks like pain. Revise and resubmit.
It's her second piece, because she loves it, because it's full of chocolate chips and she helped bake it, and we love her, because she's full of chocolate chips, and we helped bake her. Circle of LIFE!
And that's it! It was a simple, quick, delicious recipe that kept us in snacks and rounded out breakfast for the better part of a week. We'll make it again and keep both the added coconut and chocolate chips. Highly recommend.

Ms. Milkweed, this is delightful. I'm reading along about banana bread and then--BAM--I'm reading about God. It's a bit like Moby-Dick in that way. (Absolutely no sarcasm here.)
